Avocado Toast with Caramelized Turnips
1 large turnip
1 tablespoon olive oil
salt and pepper
1 large avocado
1 tablespoon Red Chili Lime sauce
2 slices toasted bread
2 tablespoons chopped parsley
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Peel the turnip, slice in half by length, slice into half moon 1/4 inch slices.
- In a medium bowl toss parsnips, olive oil, salt and pepper, until evenly coated. Spread the turnips on the baking sheet, roast for 10 minutes.
- Flip each turnip and roast fro 5-10 more minutes, if needed continue roasting until they are fork tender and caramelized.
- Smash the avocado with the Red Chili Lime sauce, season with salt and pepper.
- Top bread with avocado mixture, turnips, and parsley.
