Avocado Toast with Caramelized Turnips


1 large turnip
1 tablespoon olive oil
salt and pepper
1 large avocado
1 tablespoon Red Chili Lime sauce
2 slices toasted bread
2 tablespoons chopped parsley
 

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper.
  2. Peel the turnip, slice in half by length, slice into half moon 1/4 inch slices.
  3. In a medium bowl toss parsnips, olive oil, salt and pepper, until evenly coated. Spread the turnips on the baking sheet, roast for 10 minutes.
  4. Flip each turnip and roast fro 5-10 more minutes, if needed continue roasting until they are fork tender and caramelized.
  5. Smash the avocado with the Red Chili Lime sauce, season with salt and pepper.
  6. Top bread with avocado mixture, turnips, and parsley.
