About Us: 

We—Sarah & Dirk Marshall—are born and raised Oregonians and our array of handmade hot sauces reflect our love for and deep connection to this beautiful place we call home. We've been making and selling our spicy sauces in Portland, Oregon since 2011, and from day one, we've been driven by Sarah's passion for preserving Oregon's incredible local agricultural bounty and our shared desire to create a family business around that passion. By 2012, we’d gone from making 12-jar batches in our home kitchen to making 200 jar batches in a commercial space. But, even as we’ve grown, our fundamental practice has remained the same. Every bottle of sauce still passes through each of our hands, with Sarah doing all of the sauce-making and flavor brainstorming, while Dirk chops, labels and ships out orders. Find our sauces at restaurants around town, as well as on the shelves at your favorite local grocery stores. You can also order them right here, or come visit us every Saturday, March - October, at the PSU farmers market, where their daughter Adeline can often be found bopping around their booth. Over the years, our offerings have grown beyond just our sauces! Our canning classes have become popular, and spreading the love for the art of preservation is something we’re pretty sure Sarah was born to do. Classes cover a variety of topics, but always include tips about food waste prevention—one of the most wonderful things about canning—and how to use seasonal, local produce at its very best. Sarah can also be heard regularly online via her podcast "Masoni & Marshall: The Meaningful Marketplace" which she co-hosts with Sarah Masoni, director of the product development and process program at OSU's Food Innovation Center. About The Sauce: 

We source all of our hot sauce ingredients from local Portland-area farmers and other artisan producers in NW Oregon and SW Washington, and our desire to play a positive role in our local food system is at the heart of everything we do. We make hot sauce in tiny batches to ensure the quality of every single jar. Keeping our business small and local and making everything ourselves has enabled us to stay directly connected to the community of farmers, makers, restaurateurs, and food lovers that make Portland such an exciting place to be. We're inspired every day by our fellow community members, and we're so grateful to be able to share our passion with you in the form of our fresh, unique, seasonally-inspired sauces. 

 

Our Mission:

Marshall’s Haute Sauce brings delicious fresh and local small batch products to those that will love them. We are designed for worry free farm-to-table utilization. We buy local whenever possible and get our produce at the farmers markets we work at. The farmers market is our community and we believe in local farmers and food production, together we will make amazing things. Our hot sauces have unique spice blends and flavor combinations, but still bring the heat. Each batch is hand stamped and a real labor of love. Our sauces are sealed and don’t require refrigeration, until after they are open.

We value high end, custom fitting products that meet the needs of customers with food allergies.  All sauces are gluten free, vegan (some contain honey), and vegetarian. We don’t use any binders, additives, or other strange stuff. Our sauces are made of vegetables, vinegar, spices, and sometimes sugar or local honey. That’s it!

We believe in small business owners, farmers, and producers and work with as many as we can find.
