Barbie Party No Cook Strawberry Mousse Parfait

It's Hot out there, and you want to party with your friends after the Barbie premier. I have the perfect easy dessert for you and your pals. This easy-peasy strawberry mousse can be made ahead and kept cold in the fridge; bonus points if it is pink just like the one in the Barbie dream house.

Strawberry Mousse Parfait



Whipped Cream Topping

1 cup heavy whipping cream

1 tablespoon powdered sugar

1 teaspoon vanilla extract


Strawberry Mousse

1/2 cup strawberry freezer jam (or your fave red jam)

1/3 cup full-fat sour cream

1/3 cup cream cheese

1/3 cup heavy whipping cream

1 tablespoon powdered sugar

1/4 teaspoon kosher salt

For parfait layering: strawberry jam, fresh strawberries & edible glitter 



1. Start by making the whipped cream. Pour the cream into a food processor. Pulse 6 times until the liquid stops splashing. Scrape down the sides, add the powdered sugar and vanilla. Puree on high for 1-2 minutes until the cream is thick and fluffy.

2. Place the whipped cream into a ziplock bag or pastry bag and set aside.

3. No need to wash out the food processor. Add the jam, sour cream, cream cheese, whipping cream, powdered sugar, and salt. Puree on high for 1 minute until smooth.

4. In the bottom of a small glass dish, add a scoop of strawberry jam, coating the bottom evenly. Spoon in strawberry mousse, fill the dish to the top. Using your pastry bag, add a layer of whipped cream. Top with sliced strawberries and edible pink glitter.
