Tahini Carrots

Our spicy tahini is perfect for coating vegetables from the farmers market and giving them a nice roast in the oven. This simple recipe works for many root vegetables.

2 Tablespoons Extra Virgin Olive Oil
3 Tablespoons Marshall’s Haute Sauce Spicy Hatch Tahini
¼ teaspoon Kosher Salt
1 Bunch Small Carrots, about 9
2 Tablespoons Plain Yogurt
1 Tablespoon Lemon Juice
1 Tablespoon Carrot Tops

-Preheat oven to 400°F.
-Scrub and trim tops off carrots, reserve some greens for garnish.
-Whisk together olive oil and tahini.
-Rub carrots with mixture and place onto a parchment lined baking sheet, sprinkle with salt, set remaining mixture aside.
-Roast until tender, 25-30 minutes.
-Into remaining mixture whisk in yogurt and lemon juice.
-Garnish with minced tops.
