It is our daughter's favorite sauce and this is the most requested meal in our house. Soaking the Panko in milk helps keep the meatloaf moist, while the finely diced celery give it a little crunch. I usually double the recipe and make meatloaf sandwiches the next day. Perfect picnic food! This recipe will turn into a family fave!

Ingredients
- 1 cup (60g) dried panko bread crumbs
- ⅓ cup (70g) 2 % milk
- 1 large egg
- 2 tablespoons (35 g) ketchup

1 tablespoon (15 g) Smoked Habanero Barbeque Sauce
- 1 ½ teaspoons (3 g) Mexican oregano
- 1 1/2 cups (175 g) finely diced celery
- 1 pound 85% lean ground beef
- 1 tablespoon (8 g) kosher salt

3 tablespoons (45 g) Smoked Habanero Barbeque Sauce
- 4 tablespoons (60 g) ketchup

Directions
- Preheat the oven to 350° Fahrenheit.
- Line a 18 x 13 rimmed baking sheet with parchment paper.
- In a small bowl, stir together breadcrumbs and milk, set aside.
In a medium bowl, whisk together egg, ketchup, smoked habanero barbeque sauce, and Mexican oregano.
- Add ground beef and panko mixture to the bowl. Use your hands to mix all ingredients until well combined.
Divide mixture into 4 equal parts, place onto the baking tray. Shape each piece by hand into oval shapes, about 5 x 3 x 1.
- In a small bowl, mix together bbq sauce and ketchup. Place 1 tablespoon on each loaf and brush it evenly over each rectangle.
- Bake for 30 minutes, dollop on remaining sauce, bake another 10 minutes.
- Line a plate with paper towels, place loaves on towel, let meat rest for 5 minutes.
