Savory Strawberry Rhubarb Appetizer

 

Ingredients:

1 cup white balsamic vinegar
3 bay leaves
1 teaspoon kosher salt
1/4 cup finely diced red onion
1/4 cup finely diced rhubarb
2 strawberries
2 tablespoons olive oil
2 teaspoons lemon juice, divided
1 teaspoon Marshall's Bird's Eye Basil sauce
1 teaspoon honey
1 cup diced strawberries
1 cup ricotta
salt and pepper
10-15 slices baguette
1 tablespoon fresh basil, chopped

Preparation:

  1. Heat vinegar, bay leaves, and salt in a small skillet over high heat. Once boiling, simmer for 5 minutes. Pour vinegar over onion and rhubarb and set aside.
  2. Into a medium bowl, grate 2 strawberries on the small side of a cheese grater. Remove 1 tablespoon of vinegar from the soaking onions and rhubarb, add it to the strawberries. Whisk in olive oil , 1 teaspoon lemon juice, hot sauce, and honey.
  3. Using a fine mesh sieve, drain the onions and rhubarb, save the pickling liquid for salad dressings.
  4. Fold together the dressing, strawberries, onions, and rhubarb.
  5. In a small bowl, using a spatula, mix ricotta, q teaspoon lemon juice, season with salt and pepper.
  6. Spread the ricotta mixture on the baguette slices. Spoon strawberry mixture over the top. Garnish with basil.
