Ground Lamb Skewers With Tomato Cucumber Salad
Ingredients:
1 pound ground lamb
1 cup finely diced parsley
3 tablespoons Marshall’s Charred Chive Dulse Sauce
salt and pepper
¼ cup pickling liquid or red wine vinegar
¼ cup olive oil
3 tablespoons Serrano Cucumber mustard (or your fave mustard)
4 heaping cups salad greens
1 cup cherry tomatoes, cut in half
½ medium cucumber, thinly sliced
¼ cup crumbled feta cheese
¼ cup pickled goodies (onions, peppers, olives)
Optional: Tzatziki, Spicy tahini, hummus, grilled scallions, pita, and whatever else you love.
Instructions:
- In a large bowl combine lamb, parsley, sauce, season with salt and pepper. Mix, by hand, until well combined.
- Using wet hands or gloves, shape the meat mixture onto skewers, forming a log shape, about 4-inches long and 1-inch thick.
- Heat a grill pan over medium-high heat. Once pan is hot, brush with olive oil.
- Cook the skewers, turning occasionally, by gripping the heat side with tongs and squeezing, until slightly charred and cooked through, about 10-12 minutes.
- Meanwhile, make the salad. Whisk together pickling liquid olive oil, and mustard, season with salt and pepper.
- Add salad greens, tomatoes, cucumber, feta, and pickles. Toss salad until well dressed.
- Serve with Tzatziki, Spicy tahini, hummus, and pita.
