I visit the vibrant stalls of the Portland Farmers Market, hand-selecting ripe, fruity cherry bomb peppers alongside other supporting players – sweet onions for depth, a touch of tangy vinegar to brighten, and a whisper of agave to create a muse of flavor. Each element is chosen not just for its individual contribution, but for how it will harmonize with the heart of the sauce.
